Egg Kottu Paratha

Ingredients:-

Parathas 2 (i used frozen parathas)
Tomatoes 2 sliced
Garam masala 1/2 tsp
Cumin powder 1 tsp
Turmeric powder 1/4 tsp
Chilly powder 1/4 tsp
Coriander powder 1 tsp
Egg 1
Salt as per taste
For seasoning:
Oil 1 tbsp
Mustard seeds 1tsp
Cumin seeds 1 tsp
Large red onion chopped fine,1
Green chillies 2
Few curry leaves
Ginger and Garlic paste. 2tbsp

Method:-

1.Fry paratha on a fan until done and cut into 1" pieces.Keep aside.
2. Heat 1 tbsp oil, add 1 tsp mustard seeds, 1 tsp cumin seeds, 2 chopped green chillies, a few curry leaves, chopped onion, and fry until onion is golden.
3.Add ginger-garlic paste,fry for a minute.
2. Add egg, let it scramble and then add all the spices and tomatoes. Fry for two minutes.
3. Add Paratha pieces, mix well.Serve it with rice or hot chapatis.

I have tried many recipes from asha blog -- Aromahope.Her blog is the featured blog of this month Tried and Tasted event,the brain child of Zlamuska's spicy kitchen and the event hosted by Ashwini of ashwini's spicy .I made a small change in the recipe of not adding mustard powder as we both don't like the flavour of mustard

Varunavi.....this is one of my favorite...wen i was in coimbatore during my college life, daily i wl go to canteen with my mallu accent tamil query "kothu paratha irukkaa??"
lol...by seeing me itself dey wl get wt im goin to ask.. :)im definitely goin to try this.. :)

I had read about Kothu paratha in some blogs and found it quite interesting, hadn't tried it though. You've made it sound so selicious and must try :) bright and yummm it looks...
