Kadhai Panner



What you need:-

Panner 300gms cut into fingers
Capcisum 2 cut into strips
Onion 1
Tomatoes 3 big
Coriender seeds 3tbsp (coarsely grounded)
Whole red chillies 4 (coarsely grounded)
Ginger 3 tbsp chopped
Garlic 11/2 tbsp chopped
Green chillies 2 chopped
Oil 6 tbsp
Ginger 2 tbsp cut into juliennes

How to make:-

1.Heat a pan with 2 tbsp oil and stir fry capsicum and onions for a 2 minutes and keep aside.
2.Deep fry panner pieces and keep aside.
3.Add balance oil to the same pan and heat.Add chopped ginger,garlic and green chillies.Saute for a minute.
4.Add tomatoes and cook till oil separates.
5.Add salt,kasuri menthi,fried capsicum,onions and panner.Sprinkle little water and mix throughly ensuring that panner doesn't get mashed up.Cook for 2-3 minutes.
6.Add ginger juliennes, cook for another 2 minutes.

I Am Back ---- Bread and Butter Puding

I am back to blogging after a gap of 10 days and i am feeling as if i am not blogging since long.Please everyone accept my sincere apologies for not coming over to your blogs.Once i am fully fit,will start visiting all the blogs.

Those ten days were very hectic and emotional.Hectic is because all very sick at home and have to take care of them and then my turn came.And emotional is because mom left to Hyderabad.
My house is empty without her.She made many dishes for us and i have taken all the recipes and will post all of them.Now coming to my post,this i made it for my mom and she liked it a lot.She took the recipe from me, to get it done by my sister.

What you need:-

Bread - 6 slices
Milk - 1/2 cup
Butter - 2 small cubes
Eggs - 2
Sugar - 1/4 cup
Vanilla essence - 1tsp
Raisins - few

How to make:-
*Warm milk for 3-4 minutes.Remove from heat.
*Meanwhile whisk eggs and sugar together.
*Add warm milk in a thin stream, whisking continuously (ensure that the milk is not hot but just warm)
*Smear butter on a microwave dish.
*Layer two slices of bread over it.Sprinkle some raisins over it and spread another two slices on that and pour half of the above mixture.
*Again spread few raisins and place the last 2 bread slices on it.Pour the remaining mixture.
*Sprinkle few more raisins and bake it for 12 min on 200 degrees/till the mixture is set and golden brown on the top.

Please note:- The number of slices depends on the microwave dish you are using,more bread slices for the larger bowl.

Ginger Chicken

Ingredients:-

Chicken 1/2 kg
Ginger paste 2 tbsp
Green chillies 4
Jeera powder 1/2 tsp
Oil 1 tbsp
Onion 1
Pepper powder 1/2 tsp
Red chilli powder 1/2 tsp
Salt as per taste
Tomato chopped 1
Turmeric powder 1/4 tsp
Food colour a pinch
How to make it:-
*Wash chicken. Add red chilli powder, turmeric powder and salt and marinate.
*Heat oil in a pan, saute onions until they are light brown. Add ginger and green chillies and fry until ginger is cooked.
*Add tomatoes and and saute till oil comes and add marinated chicken and cook until chicken is cooked and sauce thickens. Mix food colour in little water and add it to the chicken.
Add pepper and jeera powders and cook for 2 of mins. Granish with coriander leaves.

Carrot and Tutty Fruity Muffins

This is the first time i made cup cakes and they came out very well.Usually my mom doesn't like to eat the cakes and breads,but these cup cakes she liked it a lot.I made carrot and tutty fruity cup cakes and did different toppings.And the best part is that these are EGG LESS

Ingredients:-

Self raising flour:- 2 cups
Sugar 1 1/2 cups
Oil 1 cup (I have reduced the quantity to 3/4 cup)
Carrot 2 cups (grated)
Milk 1/2 cup
Tutty fruity 1 cup
Baking powder 1 tsp
Baking soda 1 tsp
Salt 1/4 tsp
Tutty fruity and sugar toppings
Preparation:-

*Mix all the dry ingredients.
*Combine oil,milk,carrot,tutty fruity with the dry ingredients.
*Then spoon the batter into muffins cases and bake it 230 degrees for 30-40 minutes or until done.
*Let the muffins cool and sprinkle icing sugar or toppings of your choice.

Egg Curry--2

Ingredients:-

Eggs 2 (boiled)
Onions 2 (chopped)
Green chillies slitted
Rai few
Cumin seeds few
Cinnamon 1
Clove 1
Coriander powder 1/4 tbsp
Red chilly powder 1/4 tbsp
Curry leaves
Oil 2 tbsp
Salt as per taste

Preparation:-

*Make small slits on the boiled eggs.
*Make paste of onions
*Heat oil,add cumin seeds,clove,cinnamon and curry leaves.
*Add green chillies and saute for 2-3 minutes.
*Then add onion paste and fry till oil comes out.
*Add salt,red chilly powder,coriander powder and saute for 3-4 minutes.
*Then add boiled eggs and saute carefully for 3-4 minutes.
*Serve hot with rice/roti.

Gongura/Puntikura/Ambaadi/Sorrel Channa dal Curry

Ingredients:-
Gongura/Sorrel 1 bunch
Channa dal 1/2 cup
Green chillies 5
Onions 1
Turmeric powder 1/4tsp
Red chilly powder 1 tbsp

Seasoning:-
Rai few
Cumin sees few
Red chilly (whole) 2

How to make it:-

* Soak channa dal for 3-4 hours.
*Clean Gongura and chop it.
*Cook channa dal until half cooked.
*Mix chopped onions,slitted green chillies,turmeric powder and gongura.
*Cook till gongura is fully cooked.
*Mash the leaves and add salt.Mash carefully so that channa dal doesn't get mashed up.
*Do the seasoning with rai,cumin seeds and red chilly.

Kakara Kaaya/Bitter Gourd Fry

Ingredients:-
Bitter Gourd 4
Butter milk 4 tbsp
Turmeric powder 1/4tsp
Salt as per taste
Oil 7-8tbsp
Flavoured Chilly powder:-
Red chilly powder 1 tbsp
Garlic 2 pods (crushed)
Zeera 1 tsp (crushed)

Mix all the above and store in a container,can be used when ever required.

How to make:-
*Cut bitter gourd,add salt and mix thoroughly,keep aside for 5-10minutes
*Squeeze water for each piece and boil with little water and buttermilk for 2 minutes,don't over cook it
*Strain in a strainer and when cold squeeze water from each piece.
*Heat oil,add bitter gourd pieces.Fry in a slow flame.
*Fry till brown in colour and add the flavoured red chilly powder.

Chatpatta Aloo




Ingredients:-

Potatoes-2 large,cut to big size pieces
Frozen peas -1/4 cup
Cumin seeds - 1/2tsp
Asofoetida (hing) pinch
Turmeric powder-1/2 tsp
Onion 1 finely chopped
Ginger garlic paste 1/2 tbsp
Tomatoes 2 chopped
Coriander powder 2 tsp
Cumin powder 1 tsp
Garam masala - 1tsp
Red chilly powder - 1 tsp
Amchur powder- 1/2-1 tsp
Oil 3 tbsp
Salt as per taste

Preparation:-
*Cook potatoes in a kadai until half cooked.(don't use pressure cooker),peel the skin and cut into big sizes and keep aside.
*Heat oil,add cumin seeds and allow them to sizzle.
*Add hing,turmeric powder and onions.Mix well and saute for 3-4 minutes.
*Add Ginger garlic paste and saute till oil separates.
*Then add tomatoes and saute again till oil separates.
*Add coriander powder,garam masala,red chilly powder,cumin powder,amchur powder and salt.
*Mix well.
*Then add half cooked potatoes,mix well to coat all potatoes.Cover and cook for 5 minutes until the potatoes are cooked but not messed up.
*Add green peas,mix well and be careful in mixing so that potatoes doesn't get mashed up.

Goruchikkudu Fry / Cluster Beans

My mom has come for a holiday here for a month and she is the one who is doing cooking.For few days till she is here i will be posting her delicious recipes.Goruchikkudu fry is the one of the favourite fries of hers which we relish much.I love the addition of tur dal and fresh coconut.It's been long i didn't eat this fry,so i made it a point that this fry is the first recipe which I will be posting on my blog.Here comes the fry.......
Ingredients:-
Goruchikkudu/Cluster beans/Guar 1/2 kg (chopped)
Tur dal 1/2 cup
Onion 1 (chopped)
Fresh coconut 1/4 cup (grated)
Turmeric powder 1/4 tsp
Red chilly powder 1/4 tbsp
Salt as per taste
Tempering/Seasoning
Oil 4 tbsp
Rai few
Udad dal few
Red chilly (whole) 2
How to make:-
*Soak tur dal for 1 hour.
*Cook tur dal until it is half cooked.
*Add beans and cook till beans are half cooked and then add salt and cook for another 2mins.
*Squeeze out water with hands.
*Heat oil in a kadai,add the seasoning and when they splutter add onions.
*Once onions are brown in colour add the cooked beans,tur dal and turmeric powder.
*Fry till the beans are dry.
*Add grated coconut and red chilly powder.
Serve it with rice/roti.I sometime eat this like snacks.

Pani Puri/Gol Gappa


Ingredients:-

Puris:- 20 (Brought it from the store)

Boondi 1/2 cup

Stuffing:-

Chickpeas 1/2 cup (boiled)
Potatoes 1 (boiled and mashed)

Mix chickpeas and potatoes with little salt and keep aside.If you want more spicy add red chilli powder

Pani puri water

Pani Puri Masala 5tsp
Water 5 cups
Pinch of black pepper powder a pinch
Chaat Masala 1/2 tsp
Lemon juice 1 tsp
Salt little

Tamarind Paste
Tamarind 1 cup
Jaggery 1/2 cup
Sugar 2 tbsp
Red chilly powder 1/2
Oil 1 tsp
Salt to taste

Heat oil,add tamarind pulp and water,bring it to boil.Then add jaggery,sugar,red chilly powder and salt.Let it cool.

How to serve:-

Add bondi to the pani puri water.
Poke a small hole in the center of the puri
Stuff with the potato mixture.
Put 1/2tbsp of tamarind paste.
Dip the puri in the pani puri water and gulp it down :))))))

Bobbarlu Kurma/Black-Eyed Beans Curry

Ingredients:-

Bobbarlu/Black Eyed Beans/Lobia- 1 1/2 cup
Onion- 1 chopped finely
Tomato- 2 chopped
Ginger Garlic Paste-1 tbsp
Coriander Powder- 1tsp
Red Chilly Powder- 3/4 tap
Green Chilies-2 slit vertically
Oil 3 tbsp
Salt as per taste

Masala paste for gravy:-

Fresh coconut 1/4cup
Cinnamon 1
Clove 2
Elachi 1

Make a fine paste of the above ingredients.

How to make:-

*Soak beans over night.

*Pressure cook it and drain the water,keep aside.

*Heat oil in kadai,add onions and green chillies and fry till transparent

*Add ginger garlic paste,saute till the paste is fried.

*Then add red chilly powder,coriander powder and salt.Saute for another 2-3 minutes

*Add coconut paste and cook till the paste leaves the sides of the pan.

*Then add cooked beans and mix carefully.

*Add water and chopped tomatoes and cook on a high flame for 2-3 minutes and reduce the flame and cook till the gravy thick.

Sausages Rice


Ingredients:-

Rice 500 gms
Chicken Sausages 3
Carrot chopped 1 cup
Beans chopped 1 cup
Peas 1/2 cup
Fresh corn 1/2 cup
Black pepper 1/4 tbsp
Ajinimotto pinch
Ginger chopped 1/2 tbsp
Garlic chopped 1/2 tbsp
Soya sauce 1 tbsp
Oil 3 tbsp
Salt as per taste

Method:-


*Cook rice with 1tbsp of oil.

*Cut Chicken sausages into thin pieces and fry it in little oil and keep aside.

*Heat oil in a pan add ginger and garlic pieces.

*Add vegetables and stir fry for 2-3 min on high until veggies are cooked.

*Now add soya sauce and ajinimoto.

*Cook for 2 min, add salt.Then add rice and fried sausages.A

*Mix thoroughly,sprinkle pepper powder.


Serve hot with tomato sauce.Spring onions can also be used.I didn't use it because my kids dislike it.This is just a simple veg fried rice to which i added sausages.

Thotakura Pappu (Amarnath Leaves)


Ingredients:-

Toor dal 1 cup
Thotakura/Amarnath 1 bunch
Onion 1 (chopped)
Green chilies 2
Tamarind little
Red chilly powder 1/2tbsp
Turmeric powder 1/4tsp
Salt as per taste

Seasoning:-

Rai few
Udad dal few
Zeera few
Hing a pinch
Garlic crushed
Curry leaves few
Oil 1 tbsp
How to make:-

*Pressure cook all the ingredients except salt.
*Season the dal with the above seasoning and add salt.
