Simple Beans Fry
Ingredients:-
Beans 250gms
Onion 1 chopped
Red chilly powder 1tsp
Fresh grated coconut 3 tbsp
Turmeric powder
Salt as per taste
Seasoning:-
Oil 2-3 tbsp
Rai 1 tsp
Udad dal 1 tsp
Dry red chillies 4
Curry leaves few
Method:-
Chop beans and keep aside
Take oil in a frying pan add all the seasoning,when they are fried add beans and turmeric powder.
Sprinkle 3 tbsp of water and salt.
Cover and cook till beans are soft and water is evaporated.Check if beans are not soft enough can sprinkle another 2-3 tbsp of water.
Lastly add red chilly powder and grated fresh coconut.Mix throughly.
Serve it as a side dish along with rice and sambar/rasam

Aratikaya Vepudu/Raw Banana Fry
Ingredients:-
Raw banana 2
Onions chopped 1
Garlic flakes 2
Mustard seeds 1 tsp
Cumin seeds ½ tsp
Black gram 2 tsp
Red chilly whole 1 (break into pcs)
Red chilly powder 1 tsp
Turmeric powder 1/2 tsp
Salt as per taste
Curry leaves a few
Oil- 3 tsp
Method:
1. Peel the raw banana and cut it into round cirlces
2. Boil these cubes in a bowl by adding salt and turmeric
3. When the raw banana circles are cooked, drain the water and keep them aside.
4. Take pan and add oil. Let it heat up.Add mustards, cumin seeds,black gram,red chilly and curry leaves.
6.Add onions and fry till pink in colour.
7.Fry well and add banana.
8. Saute well and fry till raw-banana is turned into golden brown.
9. Crush garlic with red chilly powder and add it to the banana.
10.Saute well and serve as a side dish.

Simple Cabbage Fry
The only veggie i don't like eating is cabbage.My sisters and my mom like it a lot and i am the only one who hate cabbage in my house.After marriage my m-law used to cook cabbage in my house and it is my hubby's favourite.Till now i never made cabbage curry and other day hubby said it's been long i didn't eat cabbage,please make cabbage curry.Since he asked me i made this fry and vaguely remember the recipe.I gave it a try and for the first time in my cooking,cooked it without tasting it for salt.Hubby liked it a lot and ate the curry with flukas for the dinner.
Ingredients:-
Cabbage 1/2 kg chopped
Channa dal 1/2 cup (soaked for one hour)
Onions 1 chopped
Green chillies chopped
Oil 2 tbsp
Red chilly powder 1 tsp
Turmeric powder 1/4 tsp
Salt as per taste
Seasoning:-
Rai 1/4 tsp
Udad 1/4 tsp
Red chilly 1 broken into two pc
Curry leaves few
Method:-
Boil cabbage and channa dal with turmeric for 7-8 minutes or until channa dal is soft enough.Sieve in a strainer and keep aside.Once cool squeeze water out.
Take a kadai,heat oil and add all the seasoning.When the seasoning splutter add onions and green chillies.
Saute onions till light brown in colour and cabbage,channa dal and salt.
Fry till cabbage turns colour and channa dal is fried .
Serve it with rotis or hot rice and sambar.
This curry is going to participate in the Side dish for chapathi event by viki of elite foods

Alo Fry
Ingredients:-
Potatoes 1/2kg
Black pepper powder 2 tbsp
Turmeric powder 1 tsp
Salt as per taste
Oil 3 tbsp
Method:-
- Chop potatoes into thin pieces. Put all the chopped pieces in a bowl with water for 2 min,and wash thoroughly.
- Heat oil,when hot add potatoes with very little water.If much water is added, potatoes pieces will become mushy. Add salt.
- Fry till they are golden brown in colour and add pepper powder.
- Mix throughly and enjoy with hot chapattis

Bhindi Kurkuri
Got this recipe from a book which i own since long but never attempted it.When i did it came out very well.Will write about the book review soon for the event at EC.This recipe is not for the health conscious people.
Ingredients:-
Lady fingers (okra) 1 kg
Chickpea flour (besan) 1 cup
Red chilli powder 2 tbsp
Ajwain (caraway seeds) 1 tsp
Rice powder 2 tbsp
Coriender powder 2 tsp
Turmeric powder 1 tsp
Dry mango powder (amchur) 1 tsp
Garam masala powder 1 tsp
Salt as per taste
Oil for deep frying
Method:-
- Wash and dry the okra
- Chop off heads and tails of the okra and slit lenghtwise into 4.
- Take 1/2 cup of besan and mix all the ingredients in a bowl except rice powder and oil.
- Add okra to the bowl,mix well and refrigerate for 2 hours
- Mix remaining 1/2 cup besan,rice powder and little salt and toss with okra.
- If the okra are too dry and besan is not sticking to it,sprinkle little water and mix it.
- Be carefull while mixing it.
- Deep fry in batches until crisp.
I have just copy pasted the recipe from the book and only addition i did is that i sprinkled little water as the bendi was too dry and besan was not sticking to it.

Kakara Kaaya/Bitter Gourd Fry
Ingredients:-
Bitter Gourd 4
Butter milk 4 tbsp
Turmeric powder 1/4tsp
Salt as per taste
Oil 7-8tbsp
Flavoured Chilly powder:-
Red chilly powder 1 tbsp
Garlic 2 pods (crushed)
Zeera 1 tsp (crushed)
Mix all the above and store in a container,can be used when ever required.
How to make:-
*Cut bitter gourd,add salt and mix thoroughly,keep aside for 5-10minutes
*Squeeze water for each piece and boil with little water and buttermilk for 2 minutes,don't over cook it
*Strain in a strainer and when cold squeeze water from each piece.
*Heat oil,add bitter gourd pieces.Fry in a slow flame.
*Fry till brown in colour and add the flavoured red chilly powder.

Goruchikkudu Fry / Cluster Beans
My mom has come for a holiday here for a month and she is the one who is doing cooking.For few days till she is here i will be posting her delicious recipes.Goruchikkudu fry is the one of the favourite fries of hers which we relish much.I love the addition of tur dal and fresh coconut.It's been long i didn't eat this fry,so i made it a point that this fry is the first recipe which I will be posting on my blog.Here comes the fry.......
Goruchikkudu/Cluster beans/Guar 1/2 kg (chopped)
Tur dal 1/2 cup
Onion 1 (chopped)
Fresh coconut 1/4 cup (grated)
Turmeric powder 1/4 tsp
Fresh coconut 1/4 cup (grated)
Turmeric powder 1/4 tsp
Red chilly powder 1/4 tbsp
Salt as per taste
Tempering/Seasoning
Oil 4 tbsp
Rai few
Udad dal few
Red chilly (whole) 2
How to make:-
*Soak tur dal for 1 hour.
*Cook tur dal until it is half cooked.
*Add beans and cook till beans are half cooked and then add salt and cook for another 2mins.
*Squeeze out water with hands.
*Heat oil in a kadai,add the seasoning and when they splutter add onions.
*Once onions are brown in colour add the cooked beans,tur dal and turmeric powder.
*Fry till the beans are dry.
*Add grated coconut and red chilly powder.
Serve it with rice/roti.I sometime eat this like snacks.

Thotakura fry/Amarnath leaves fry
We all love to eat green vegetables at home.There in Hyderabad my mom used to cook every alternate day as there was a guy who used to sell leafy vegetables on his cycle.Every alternate day he used to give my mom.My daughter think this is spinach and she likes to eat it because Popeye eats spinach.This recipe is my mom's recipe.I hardly get this in the super markets here,what i get is the red ones which i don't like.But when ever i see thotakura i pick it up.
Thotakura fry 2 bunches
Onions 2
Green chillies 2
Red chillies 2
Rai 1tsp
Udad dal 2tsp
Oil 2 tbsp
Turmeric powder 1/4 tsp
Salt as per taste
Method:-
- Wash amarnath leaves twice so that all the sand gets washed away and chop it.
- Chop onions keep aside.
- Heat oil add red chillies,green chillies,rai and udat.When udat starts turning brown colour add the chopped leaves and onions.
- Add salt and turmeric powder.
- Cover and cook it all the water evaporates and the leaves are well cooked.No need of adding water as the leafy vegetables when cooked leaves water.But if you still think water is not sufficient,you can add little water.
Red chilly powder can be used in place of whole red chillies,i don't use chilly powder because i want the fry colour to be green.Please note that onions are not fried in this curry,they get cooked with the leaves.
