Simple Egg Roast

This egg roast is the simple and easy to make when there is no time to cut veggies or when there is nothing to make for a side dish for lunch.It calls for very few ingredients.Here goes the recipe

Ingredients:-

Boiled eggs 3
Onions chopped 1
Green chillies slited 2
Red chilly powder 1/4 tsp
Turmeric powder a pinch
Coriander powder 1//4 tsp
Salt to taste
Oil 2 tbsp

Method:-

Take red chilly powder,turmeric powder,salt and coriander in a small bowl,add 1 tsp oil and make a paste
Cut the boiled eggs into two.Apply the above paste on the egg pcs.Keep aside for 3-4  minutes.
In a pan take the remaining oil and fry onions and green chillies until done.
Now make some space in the center of the pan.Now keep the cut side down in the pan and cover the eggs with the fried onions and green chillies.
Let it be like that for 2-3 minutes.
Carefully turn and fry for another 2-3 minutes.
Serve warm with lunch or can be had as evening snacks.

Andey Ka Paratha (Egg Paratha)

Ingredients:-

Wheat flour 250gms
Eggs 4,beaten
Ajwain 2 tsp
Red chilly powder 1 tsp
Salt to taste
Oil

Method:-

1.Knead flour with some water to form a dough and keep aside for 30 minutes.
2.Beat eggs,red chilly powder and salt.
3.Divide into 4 equal sized balls.
4.Roll out the balls into 6 inch diameter discs.
5.Fold to form a semicircle.
6.Smear a little oil and sprinkle flour once again.Fold to form a triangle.Roll out into a large triangle.
7.Place the triangle on a hot griddle.Cook on both sides till brown specks start appearing on the paratha.
8.With a knife,gently lift up one flap and pour in the 1/3rd of the beaten egg.Flip over and cook on low heat.Apply 1tsp of oil on both sides and cook till light brown and crisp.

PS.Please be careful when lifting the flap with the knife.

Egg Kottu Paratha

Ingredients:-

Parathas 2 (i used frozen parathas)
Tomatoes 2 sliced
Garam masala 1/2 tsp
Cumin powder 1 tsp
Turmeric powder 1/4 tsp
Chilly powder 1/4 tsp
Coriander powder 1 tsp
Egg 1
Salt as per taste
For seasoning:
Oil 1 tbsp
Mustard seeds 1tsp
Cumin seeds 1 tsp
Large red onion chopped fine,1
Green chillies 2
Few curry leaves
Ginger and Garlic paste. 2tbsp

Method:-

1.Fry paratha on a fan until done and cut into 1" pieces.Keep aside.
2. Heat 1 tbsp oil, add 1 tsp mustard seeds, 1 tsp cumin seeds, 2 chopped green chillies, a few curry leaves, chopped onion, and fry until onion is golden.
3.Add ginger-garlic paste,fry for a minute.
2. Add egg, let it scramble and then add all the spices and tomatoes. Fry for two minutes.
3. Add Paratha pieces, mix well.Serve it with rice or hot chapatis.

I have tried many recipes from asha blog -- Aromahope.Her blog is the featured blog of this month Tried and Tasted event,the brain child of Zlamuska's spicy kitchen and the event hosted by Ashwini of ashwini's spicy .I made a small change in the recipe of not adding mustard powder as we both don't like the flavour of mustard

Egg Curry--2

Ingredients:-

Eggs 2 (boiled)
Onions 2 (chopped)
Green chillies slitted
Rai few
Cumin seeds few
Cinnamon 1
Clove 1
Coriander powder 1/4 tbsp
Red chilly powder 1/4 tbsp
Curry leaves
Oil 2 tbsp
Salt as per taste

Preparation:-

*Make small slits on the boiled eggs.
*Make paste of onions
*Heat oil,add cumin seeds,clove,cinnamon and curry leaves.
*Add green chillies and saute for 2-3 minutes.
*Then add onion paste and fry till oil comes out.
*Add salt,red chilly powder,coriander powder and saute for 3-4 minutes.
*Then add boiled eggs and saute carefully for 3-4 minutes.
*Serve hot with rice/roti.

Egg Fried Rice

Ingredients:-
Basmati rice 500gms
Eggs 3
Onions 1
Green chillies 2
Ginger 1"piece
Cinnamon 1
Clove 2
Bay leaf 1
Pepper powder 1 tbsp
Salt as per taste
Oil 4 tbsp
Preparation:-
  1. Beat egg and add pepper.Make a big omelet and cut it into small pieces.
  2. Heat oil,add all the masala.Saute till they are fried.
  3. Add onions,ginger and green chillies.Saute till they are pink in colour.
  4. Now add rice to the above mixture and mix thoroughly.
  5. Microwave high for 15-17 minutes.The cooking time depends on the microwave watts.

Caramel custard

Ingredients:-

Milk 1 1/2 cup
Egg 1
Sugar 1/2 cup
Vanilla essence 2 drops
Bread 2
Custard Powder 2 tbsp
Sugar for caramel 1 tsp

Method:-

  1. Mix egg and sugar until creamy
  2. Add milk little by little and mix well.
  3. Add custard powder to the milk and mix well.Add vanilla essence and mix well.
  4. Take 1tsp of sugar in the custard mould(if you don't have custard mould than use any steel utensil will do) with 1 tbsp of water.Keep over a low flame and cook till sugar becomes brown and charred.
  5. Mask the sides of the mould with the caramel
  6. Pour the milk and egg mixture and cut the bread into four and put on the egg mixture.
  7. Cover the mould and pressure cook till you get 3 whistle.
  8. Unmould and serve.

This is my m-law's recipe.Sometimes i dont use custard mould,i just use the steel utensil.

Egg curry


Ingredients:-

Eggs 4 (boiled)

Tomatoes 4 (big)

Onions 1

Green chillies 2

Zeera 1/2 tbsp

Coriander powder 1/2 tbsp

Garam masala powder 1/2tsp

Ginger garlic paste 1 tbsp

Red chilly powder 1/2 tbsp

Turmeric 1/4 tbsp

Oil 2 tbsp

Salt as per taste

Method:-

  1. Boil eggs and remove yellow part.Slice eggs and keep it aside
  2. Make tomato paste with two tomatoes and keep it aside
  3. Heat oil,add zeera and onions and fry until onions are brown in colour.
  4. Add ginger garlic paste and saute till ginger garlic are cooked.
  5. Then add tomatoes and saute for 3-4 min and add tomato paste,saute for another 3-4min
  6. Add turmeric powder,green chillies,red chilly powder,coriander powder,garam masala and salt.
  7. Cook till tomatoes leaves oil.Then add sliced eggs and saute very gently so that egg doesn't break.Cook till the gravy coats the egg slices.
  8. If required add little water.I added water because i wanted some gravy to be eaten with rice,if this curry in made for rotis then no need to add water.
