Dosakaya Vankaya Pachadi/Cucumber Brinjal Chutney

Ingredients:-

Brinjals 1/2 kg
Dosakaya (cucumber) 1/2 kg
Green chillies 10
Garlic 5 pods
Tamarind and salt as per taste
Coriander leaves few
Oil 1 tbsp

Method:-

Cut brinjals into small pieces and fry till brown in colour.
Fry green chillies and keep aside.
Remove seeds from cucumber and cut it into small pieces.
Grind green chillies,tamarind and salt into fine paste.
And fried brinjals,cucumber and garlic.
Grind into a coarse paste.

This brinjal chutney is going to the event fall in love with brinjal hosted by sanghi of tastybites.

Dosa Varieties and Karivepaku podi (curry leaf powder)

Ingredients:-

Rawa/Sooji 1 cup
Maida 1 cup
Rice flour 1 cup
Curd 1-1 1/2 cup
Sugar 1/2 tbsp
Cooking soda 1/4 tsp
Zeera 1/2 tbsp
Curry leaves few
Rai 1/4 tbsp
Salt as per taste
Oil

Method:-

1.Mix rawa+maida+rice flour+curd+sugar+Cooking soda+salt and water.Let it rest for 1 hour.
2.Heat oil in a kadai,add rai+zeera and curry leaves.Once the seasoning is ready,mix it with the batter.
3.Heat a non-stick tawa, rub the tawa with a slice of onion and oil.Take ladle full of batter and spread it on the tawa and put oil around the dosa and flip it once and serve.

Ingredients

For dosa:
1 cup urad daal
3 cups rice

For Onion Paste:
2 large onions
1/4 tsp jeera powder
1/4 tsp ginger paste
1/4 tsp garlic paste
1 tsp red chili powder
Coriander leaves few

Make paste of all the above and keep aside

Method:-
Soak urad daal and rice preferably overnight and grind to make a smooth paste and let it
marinate over night. Next day morning add salt and mix it thoroughly.

Put dosas on a hot pan and with a tea spoon spread the paste all along the dosa to cover
almost the entire dosa.

Ingredients

Udad dal 1 cup
Moong dal 1 1/2 cup
Salt as per taste
Oil
Onions chopped finely 1
Green chillies chopped finely 2
Ginger chopped finely 1" pc
Coriander chopped finely.

Method:-

Soak Moong dal and udat dal separately for 3-4 hours.
Grind them together into a smooth batter and this batter doesn't need to be fermented.
Make thick dosa.Spread onions,green chillies,ginger and coriander on the dosa and serve.

This is my mom's recipe,when she was here she did it and i am posting it now.

Ingredients:-

Curry leaves dried 2 cups

Senaga pappu (channa dal) 4 tbsp

Minappa pappu (udad dal) 2 tbsp

Cumin seeds 1 tbsp

Coriander seeds 1 tbsp

Dried red chillis 6-7

Tamarind 1 small size of a lemon

Salt to taste

Oil 2 tbsp

Method:-

1.Take 1 tbsp of oil in a kadai,add channa dal and udad dal,fry until both changes colour and don't burn them.Remove from the kadai and keep aside.

2.In the same oil add coriender seeds and zeera.Toss them till they are brown in colour.Remove it and keep aside.

3.In the same kadai take the remaining oil and fry red chillies for 2-3 minutes.Keep aside.

4.Add curry leaves and roast till the leaves are crispy.Let all the ingredients cool.

5.Once cool,grind both the dals until coarse,followed by cumin and coriander seeds.

6.Add tamarind and red chillies and grind again.

7.Lastly add curry leaves and salt and grind into smooth powder.

Serve it with hot rice,dosa or idly.

Alo Fry

This is simple alo fry yet delicious. My mom did this when she was here.

Ingredients:-

Potatoes 1/2kg
Black pepper powder 2 tbsp
Turmeric powder 1 tsp
Salt as per taste
Oil 3 tbsp

Method:-
  • Chop potatoes into thin pieces. Put all the chopped pieces in a bowl with water for 2 min,and wash thoroughly.
  • Heat oil,when hot add potatoes with very little water.If much water is added, potatoes pieces will become mushy. Add salt.
  • Fry till they are golden brown in colour and add pepper powder.
  • Mix throughly and enjoy with hot chapattis

Nalla Karam/Black Red Chilly Powder


This is done by mom, the taste is awesome. Usually Andhra lunch starts with hot rice and nalla karam,then follows other dishes. This can be eaten with idly and dosa as well.The taste is awesome when sprinkled on hot pongal.Before my mom came here we used to buy priya nalla karam, now i no longer buy this. Now the recipe

Ingredients:-

Red chillies 50gms
Coriander seeds 50 gms
Cumin seeds 1 tbsp
Tamarind little (can be adjusted according to the taste)
Salt as per taste
Garlic flakes 5
Oil 1 tbsp

Method:-

Heat oil in a pan, fry the red chillies for a minute. Remove and keep aside.
In the remaining oil, fry coriander seeds, cumin seeds and grind with red chillies until smooth.
Add salt, tamarind, garlic and blend to a smooth powder.

Egg Curry--2

Ingredients:-

Eggs 2 (boiled)
Onions 2 (chopped)
Green chillies slitted
Rai few
Cumin seeds few
Cinnamon 1
Clove 1
Coriander powder 1/4 tbsp
Red chilly powder 1/4 tbsp
Curry leaves
Oil 2 tbsp
Salt as per taste

Preparation:-

*Make small slits on the boiled eggs.
*Make paste of onions
*Heat oil,add cumin seeds,clove,cinnamon and curry leaves.
*Add green chillies and saute for 2-3 minutes.
*Then add onion paste and fry till oil comes out.
*Add salt,red chilly powder,coriander powder and saute for 3-4 minutes.
*Then add boiled eggs and saute carefully for 3-4 minutes.
*Serve hot with rice/roti.

Gongura/Puntikura/Ambaadi/Sorrel Channa dal Curry

Ingredients:-
Gongura/Sorrel 1 bunch
Channa dal 1/2 cup
Green chillies 5
Onions 1
Turmeric powder 1/4tsp
Red chilly powder 1 tbsp

Seasoning:-
Rai few
Cumin sees few
Red chilly (whole) 2

How to make it:-

* Soak channa dal for 3-4 hours.
*Clean Gongura and chop it.
*Cook channa dal until half cooked.
*Mix chopped onions,slitted green chillies,turmeric powder and gongura.
*Cook till gongura is fully cooked.
*Mash the leaves and add salt.Mash carefully so that channa dal doesn't get mashed up.
*Do the seasoning with rai,cumin seeds and red chilly.

Kakara Kaaya/Bitter Gourd Fry

Ingredients:-
Bitter Gourd 4
Butter milk 4 tbsp
Turmeric powder 1/4tsp
Salt as per taste
Oil 7-8tbsp
Flavoured Chilly powder:-
Red chilly powder 1 tbsp
Garlic 2 pods (crushed)
Zeera 1 tsp (crushed)

Mix all the above and store in a container,can be used when ever required.

How to make:-
*Cut bitter gourd,add salt and mix thoroughly,keep aside for 5-10minutes
*Squeeze water for each piece and boil with little water and buttermilk for 2 minutes,don't over cook it
*Strain in a strainer and when cold squeeze water from each piece.
*Heat oil,add bitter gourd pieces.Fry in a slow flame.
*Fry till brown in colour and add the flavoured red chilly powder.

Chatpatta Aloo




Ingredients:-

Potatoes-2 large,cut to big size pieces
Frozen peas -1/4 cup
Cumin seeds - 1/2tsp
Asofoetida (hing) pinch
Turmeric powder-1/2 tsp
Onion 1 finely chopped
Ginger garlic paste 1/2 tbsp
Tomatoes 2 chopped
Coriander powder 2 tsp
Cumin powder 1 tsp
Garam masala - 1tsp
Red chilly powder - 1 tsp
Amchur powder- 1/2-1 tsp
Oil 3 tbsp
Salt as per taste

Preparation:-
*Cook potatoes in a kadai until half cooked.(don't use pressure cooker),peel the skin and cut into big sizes and keep aside.
*Heat oil,add cumin seeds and allow them to sizzle.
*Add hing,turmeric powder and onions.Mix well and saute for 3-4 minutes.
*Add Ginger garlic paste and saute till oil separates.
*Then add tomatoes and saute again till oil separates.
*Add coriander powder,garam masala,red chilly powder,cumin powder,amchur powder and salt.
*Mix well.
*Then add half cooked potatoes,mix well to coat all potatoes.Cover and cook for 5 minutes until the potatoes are cooked but not messed up.
*Add green peas,mix well and be careful in mixing so that potatoes doesn't get mashed up.

Goruchikkudu Fry / Cluster Beans

My mom has come for a holiday here for a month and she is the one who is doing cooking.For few days till she is here i will be posting her delicious recipes.Goruchikkudu fry is the one of the favourite fries of hers which we relish much.I love the addition of tur dal and fresh coconut.It's been long i didn't eat this fry,so i made it a point that this fry is the first recipe which I will be posting on my blog.Here comes the fry.......
Ingredients:-
Goruchikkudu/Cluster beans/Guar 1/2 kg (chopped)
Tur dal 1/2 cup
Onion 1 (chopped)
Fresh coconut 1/4 cup (grated)
Turmeric powder 1/4 tsp
Red chilly powder 1/4 tbsp
Salt as per taste
Tempering/Seasoning
Oil 4 tbsp
Rai few
Udad dal few
Red chilly (whole) 2
How to make:-
*Soak tur dal for 1 hour.
*Cook tur dal until it is half cooked.
*Add beans and cook till beans are half cooked and then add salt and cook for another 2mins.
*Squeeze out water with hands.
*Heat oil in a kadai,add the seasoning and when they splutter add onions.
*Once onions are brown in colour add the cooked beans,tur dal and turmeric powder.
*Fry till the beans are dry.
*Add grated coconut and red chilly powder.
Serve it with rice/roti.I sometime eat this like snacks.
