Carrot Almond cake
Ingredients:-- Self raising flour 1 cup
- Castor sugar 1 cup
- Egg 1 no
- Carrot (grated) 1 cup
- Almond essence ¼ tbsp
- Butter ¼ cup
- Milk ½ cup
- Almonds (grated) 6 nos
- Baking powder 1 tsp
Method:-- Mix flour, baking powder and castor sugar.
- Beat egg with a beater until fluffy. Add carrot and almond essence. Beat for 2 min.
- Add milk, butter and beat for another 1 min.
- Now add the batter to the flour and mix thoroughly with a wooden spatula.
- The batter should be of dropping consistency.
- Grease the tin with butter and dust it with flour.
- Pour the cake mixture into the tin and sprinkle grated almonds on the top.
- Bake at 220 degree for 40-45 min.Check with a toothpick when inserted comes out clean then the cake is done.
- Cool it on a rack.
